INGREDIENTS
Potato (cut into cubes) - Medium size 4 Nos
Onion (chopped) - 1 No
Green chillies - 2 Nos
Coconut (grated) - 1/2 Cup
Curry leaves (Few) - Optional
Coriander powder - 3 tsp
Chilly powder - 2 tsp
Turmeric powder - 1/2 tsp
Fennel seeds - 1 tsp
Ginger - 1/4 inch
Garlic cloves- 4 Nos
Salt - (as required)
Oil - (as required)
INSTRUCTIONS
Heat a pan and add coconut, half of the chopped onions, fennel seeds, ginger, garlic cloves, green chillies and curry leaves (if any).
Dry roast this mixture until the coconut turns light brown.
Add the coriander and chilly powder to the ingredients in the pan and mix gently.
Switch off immediately. Otherwise, the masala powders will get burnt.
When cool, grind it with a little bit of water and keep aside.
Heat oil (preferably olive/coconut oil) in a pan, fry the rest of the chopped onions, cubed potatoes and turmeric powder until the onions turn translucent.
Add the ground coconut paste and salt. Sauté the masala well.
Add little water as per your required consistency and cover the pan with a lid until the potatoes are cooked (6-7 mins).
Open the lid of the pan and let it simmer for 2 mins in medium flame.
